How to make a Don Special Daiquiri

In this article, I will explain how to make a perfect Don’s Special Daiquiri, starting from the choice of the ingredients to the correct preparation technique.

Don’s Special Daiquiri is one of my favourite tiki drinks, a perfect balance between the sweet and caramel notes of the Jamaican rum and honey, and the acid notes of the passion fruit and lime.

Ingredients

  • 3cl (1 oz) Gold Jamaican Rum
  • 1.5cl (1/2 oz) Light Cuban Rum
  • 2cl (3/4 oz) Fresh Lime Juice
  • 1.5cl (1/2 oz) Passion Fruit Syrup
  • 1.5cl (1/2 oz) honey mix

Directions

In a shaker pour all the ingredients. Fill the shaker with ice and shake to chill and dilute the drink. Filter (double strain) the drink in a previously chilled cocktail glass.

Some tips

The Don’s Special Daiquiri is a seemingly easy drink to make, but it’s very easy to make mistakes. In fact, there are many sugary ingredients in this Donn Beach’s tiki and the risk is to make a sweet and nauseating drink. In particular, the choice of the Jamaican rum, passion fruit syrup and honey plays a crucial role.

The choice of Jamaican rum. Many Jamaican rums have a very intense flavour and, from the point of view of the taste, tend to be sweet with caramel and molasses notes. For a delicate flavour is suggest you Appleton Estate signature blend, while for a stronger flavour, with a slight smoky note, my advice is Myers’s (though it’s dark). Even with Captain Morgan jamaican rum you can get a great result.

However, the key ingredient of the balance is the passion fruit syrup. The passion fruit is an acid fruit. I prefer the purple variety because it is more aromatic than yellow (commonly called maracuja). The commercial syrups available, are not, in my opinion, suitable for preparing this drink because they often lack in acidity and have a ‘cooked’ note: they remind the jam. miele cocktail engineering giovanni ceccarelliHoney, instead, cannot be used as such, but needs to be diluted: you must prepare what the bartenders call honey mix or honey syrup. I prepare the honey mix blending in a container honey and water, in different proportions depending on the honey.
