How to mix a Zombie (1934 recipe)

In this article I will talk about the recipe and preparation of the Zombie, the most famous tiki drink by Donn Beach.

Gianni Zottola warns us! Zombie is not a lemonade! It is the most famous tiki drink ever, invented by Donn Beach and became the symbol of tiki drinks in 1934.

  • 4.5cl gold Puerto Rican or Cuban rum
  • 4.5cl dark Jamaican rum
  • 3cl rum overpoof (I use Lemon Hart)
  • 2 cl fresh lime juice
  • 1.5cl falernum *
  • 1.5cl Donn’s mix **
  • 1 barspoon of grenadine
  • Angostura bitters
  • Pernod

The preparation technique is called flash-blend. The flash-blend means that you should blend this drink for 5-7 seconds with a precise amount of crushed ice (about 180 grams). This way the ice does not melt completely, but remains on the surface forming a ‘crust’ which, melting slowly, keeps the drink temperature constant. If you do well, secondary dilution should not over-modify the drink in the time it takes for consumption. Decorate with fresh mint.

* Falernum is a very sugary liqueur prepared with lime, ginger, clove, almond flour, rum and sugar. Beachbum Berry recommends using Wray and Nephew. I personally use a light Cuban or Puerto Rican fashion rum to enhance the other ingredients. Click here to learn how to make the falernum.

** Donn’s mix is a premix based on yellow grapefruit juice and cinnamon syrup. For the recipe click here.

Now that you know how to prepare a Zombie, I invite you to visit Gianni Zottola’s blog. Gianni is the Italian tiki leading expert, writes on BarTales and has opened a blog on this subject. Lately he has written two interesting articles, one on Donn Beach’s life and one on the Zombie.

Happy mixing,
