The recipe I propose today is a twist on the classic Bellini, a typical Italian aperitif. Instead of the white peach juice, I used a home-made peach country wine, made by Flavio in our Drink Factory laboratory.
The drink has a strong aroma of peaches, it is slightly less sweet than the classic Bellini and has a lighter texture.
- 3cl Home-made peach country wine;
- 9cl Prosecco.
In a mixin’ glass pour the home-made peach country wine (filtered) and add the prosecco. Mix gently and pour into a previously chilled flûte. I do not decorate this drink because I think that a nice glass is more than enough!
For the success of this cocktail, it is necessary to use very cold ingredients and filter the Fermented Peach Wine very well. This allows to preserve the effervescence!
